Food Journal- Day 21 (Kim)

Hello all! Super excited to be home and have our schedule back to normal. I am going to work on some sort of menu after I get the house back in order and have a few minutes to sit down and make a plan. I did make extra rice with dinner last night and we bagged the leftovers up and put them in the freezer so that we can use them for quick meals. I also think that I am going to cook all the ground beef that we have in the freezer and re-freeze it so that I can use it in quick recipes too.

So, being home is great and I have had the opportunity to eat with my family and cook for them which is very important to me.

Breakfast: Instant oatmeal and two slices of toast with jelly. I shared the oatmeal with Olivia and she ate a lot of it so I didn't get a full serving but I was still okay.

Snack:Granola square thing with peanut butter on it. I think it is the same thing that Katie can't stay out of only hers have dark chocolate on them.

Lunch: Turkey sandwich on white bread, sugar snap peas and two handfuls of original Lay's Potato chips.

Snack: Pudding cup with two graham cracker squares.

Dinner: Chinese noodles (spaghetti with pork, hard boiled egg, green onion and cream soup) and one ear of corn on the cob. I have to confess that even though I had the option of spray "butter", I opted for the real stuff on my corn but I used less than I normally do.

Snack: A few too many vanilla wafer cookies... I took the box, never a good plan for me.

I did a lot better with the water today! I drank 64 oz. of water and only 20 oz. of diet Pepsi! An improvement for me.

Thanks for the ideas for meal planning. I just need to get it organized. We are really trying hard to set a good example for our little one that is just starting to eat and to be more healthy ourselves while we are at it.

Oh, I also want you to know that I passed by the Ben and Jerry's at Target today, did not buy a rice crispy treat at the snack bar and ignored the candy bars at the check out. Pretty proud of myself today!

Food Journal: Day 18 (Kim)

I really don't have much to say today. It was just another day. Nothing super exciting or out of the ordinary (for me anyway). I did go out with my sisters tonight which is always fun and a nice break from everything else. I even feel like I made good choices for dinner.

Breakfast: I had room service this morning in the hospital while I was sitting with my little one. I had an omelet with mushrooms, onions, green peppers and swiss cheese. I also had cream of wheat with a little brown sugar and milk in it, some pan fried potatoes and watermelon. I know it was a huge breakfast but I woke up really hungry and I didn't eat anything else until lunch time.

Lunch: White rice with a little butter and soy sauce, teriyaki baked tofu and sugar snap peas (raw).

Dinner: I had a regular roast beef sandwich from Arby's and a side salad with about 1 tsp. of balsamic vinaigrette and a diet Dr. Pepper.

Snack: Well it was girls night and the only true consistency of  girls night (besides Target) is U-Swirl. I had to try something new since my usual flavor was not there anymore. I had chocolate and angel food cake swirled. And since I have very strange tastes (or so my sisters say) I had some gummy bears, Reece's Pieces and a cupcake shell. I did go lightly on the candy but probably should have left it off completely.

I did not drink enough water, or anything for that matter today. I really need to focus on drinking water...

I also need to set some goals for me and my family regarding eating out. We eat at restaurants way too often. I have tried making menu's and planning out the food for the week but this never seems to work because I am a mood eater and I really have to be in the mood for something and it is impossible to predict my mood. We also are on the go a lot so it is easier to grab and go at a drive thru. This has become a very important thing to me since our baby is now starting to want what we are eating and I want to set a good example for her about healthy eating habits. Any advice on creating and keeping to a healthy eating schedule and menu planning ideas would be great!

Food Journal- Day 15 (Kim)

Hello all! Today was a pretty productive day all in all and I did okay on the food front. We are getting ready (hopefully) for discharge any day now so my stress level has been a little lower. However, today I have felt hungry all day. Even right after I finish a meal. Not sure what is up with that. So, considering that all my stomach wanted me to do all day was eat I feel like I didn't do too horribly. Breakfast- Carnation instant breakfast and a Greek yogurt. Snack- beef jerky. Lunch- homemade grilled hamburgers about 1/2 a serving of fries (made in the oven) and a pickle spear. (@ Katie, I have more pickle juice for you btw :) ). Snack- four graham cracker squares made into microwave s'mores using ten mini marshmallows and a chocolate kiss for two of them. Dinner- Rice-a-Roni, corn, Yakimandu (or as my husband like to call them, little Korean tacos) and a piece of Pretzel Challah. Snack- an orange and a string cheese. I didn't do as well with the water today, only about 30 oz. and I drank a 20 oz diet Pepsi and a glass ( about 12 oz.) of Code Red Mountain Dew. I also used about 16 oz of skim milk to make my breakfast. I am not sure why I am so hungry today... Hopefully it will pass. I am going to have a glass of water and go to bed.

Food Journal- Day 12 (Kim)

Today has been a very stressful one for me. We are on day 23 at the hospital with the little one and it feels like we are going in a vicious circle. When will it end... unfortunately for me I am a stress eater so that was an even bigger challenge for me today than trying to keep my cool and not stress the kiddo's out. BUT... I feel like I did pretty good considering how many times today I craved chocolate and icecream.

Breakfast: Carnation instant breakfast with about 16 oz of skim milk and a banana.

Snack: Did not happen, it was a rough morning and as much as I wanted to snack on everything I could think of I resisted and stayed by my daughters side while she was having problems.

Lunch: Oven "fried" chicken and coleslaw from the cooking light section of the hospital cafeteria and some watermellon.

Snack: Jerky and one string cheese.

Dinner: About a third of a Machaca meal from a little hole in the wall mexican reastaraunt. I had no idea what I was getting when I ordered the lady did not describe it well at all. She said it was shredded beef with green peppers, onions, tomatoes and chili's cooked into it, it was actually shredded beef, green peppers, onions, chilis and scrambled eggs. It was very good but enough food for at least two people so I will probably have it again tomorrow.

So far I have not had a snack tonight, nor do I think I will. I am still pretty full from dinner. I did ok with the water today, about 30 oz. I also had a 16 oz. Diet Dr. Pepper. I am also working on another glass of water right now and am sure I will finish it and maybe part of another one before bed. I am feeling very thirsty tonight.

Food Journal- Day 9 (Kim)

Okay, let's try this again. I had this completely written and went to preview it and it disappeared. So, I will try one more time and if this doesn't work... I may go crazy. ;) I know this post should have gone up last night but a series of events prevented this from happening. First my little girl who has been in the hospital for three weeks today was moved out of the PICU last night which is great news but I decided to stay with her since it was her first night in a new room. This alone would not have prevented me from posting but then the hospitals wifi was down until about an hour ago and the computer in the parents lounge would not run blogger. So, here I am at 6:30 in the morning writing (again) the blog. Better late than never, right? Breakfast: Kashi trail mix granola bar and a Chobani blueberry yogurt. Snack: One Laughing Cow cheese wheel and some watermelon. Lunch: half of a Greek gyros from Opa with lots of veggies (lettuce, tomato, cucumber and onion) and some pita wedges with hummus and zta Zsi Ki sauce. (Pretty sure I butchered the spelling of that) Snack: beef jerky and a Diet Pepsi (20 oz.) Dinner: the rest of the gyros sandwich and some watermelon. Snack: a handful of cracker chips. I have tried two different brands of these lately and I have to say the ones made by Pepperidge Farms are by far the best and they are less expensive too. (the other brand was Special K) My last post I talked about my lack of water intake so I have been paying close attention to this the past two days and am pretty proud of my efforts. Today I drank a at least 40 oz. and close to that the day before! I took the advice from Heidi about not drinking soda until I have had at least three glasses of water and from Lorraine (she posted on the Facebook link) and kept a refilable water bottle with me all day full of ice water. So thank you both for your advice! I will try to keep it up. Now I am going to post this without previewing it and hopefully it will post successfully because I really don't know if I have the patience to do it all over again. If there are typos I apologize and I will fix them when I get a chance at home on the computer since my IPad seems to not want to let me preview! So until next time...

Food Journal Day 6 (Kim)

So, I feel like I did a little better today with the fruits and veggies. I even ate less junk food so that is good too. We are on day 17 of a hospital stay for our little one and I am getting really sick of fast food (or any food not cooked in my kitchen for that matter). Today I got to have one home cooked meal!

Breakfast: Carnation instant breakfast (made with about 16 oz. of whole milk) and a banana

Lunch: Chicken salad from the Safeway deli on a kaiser bun, a tomato, some (5-6) sugar snap peas with about 1 tsp. of ranch dressing and about 1 cup of watermelon chunks.

Snack: ONE (believe it or not) Girl Scout Cookie and about 10 Ritz crackers with a slice of pepperoni and a small piece of cheese on each of them.

Dinner: (HOME COOKED!!!) Spaghetti with meat sauce, two small slices of garlic bread and broccoli.

Not too bad for the day, however I did drink two 20 oz. bottles of diet Pepsi and a small carton (think school lunch) of chocolate milk. I did not drink water, which of course I just realized now, so I will be having a glass before I go to bed and that will be my goal for the next few days. If anyone has any suggestions on ways to remember the water throughout the day I really struggle with this and would love the input. I often don't realize how little water I drink until I become really dehydrated...

Food Journal- Day 3 (Kim)

Hello all! Kim here reporting in for day 3 of our new blog. This is a first for me so bear with me as I get the hang of it all. When my sisters and I first started talking about doing this and throwing around ideas, this was the one that I was not so sure about but in the end it seemed to be the simplest of the ideas so probably a good one to start with to get the ball rolling.
As I sit here eating a bowl of fresh strawberries with f.f. creamer on them trying to redeem myself at the end of yet another grazing day at the hospital (my baby has been there for the last two weeks). There is not a whole lot to do there so I tend to graze A LOT! At first I planned to be really good all day so that it wouldn't look so bad here but then I thought about why we are doing this and I figured that if I reigned myself in on day 3 just to look good then it would make it more difficult for me on day 99. :O) Besides I think that if I want this 100 day look at my eating habits to do me any good I have to be completely honest with myself and all of you.
So; here goes...

This morning I awoke in the hospital only to realize that I was completely out of my breakfast staples of the past two weeks (carnation instant breakfast and a banana) so I had a Kashi Trail Mix granola bar and some water that was in the room... pretty sad I know but I didn't feel like traipsing to the fridge in the nutrition room for some milk or orange juice and that was about all I had that sounded good for breakfast.

Now as you read yesterday, we gave Heidi the pleasure of reporting on her fair food intake and believe me we gave her loads of crap about it all day. However, I am a sucker for cotton candy and had to bring a bag home with me. So, needless to say this was my snack throughout the day. I bought the jumbo bag, I even let my daughter and my husband have a little (little being the operative word there). But it lasted me throughout the day.

Lunch was a little early for me as you can well imagine a granola bar and cotton candy didn't really fill me up. So I ate about 11:30 instead of my normal 1:30 or 2:00. I had a medium baked potato with Hormel turkey chili on it and a little cheese, I also had two small dinner rolls with butter. REAL butter! I love bread and butter! I also had about 10 oz. of Diet Pepsi.

Again with the cotton candy for a snack (really I just grazed on it all day). I also had some of my husbands soda that was not diet but I ended up not drinking much because it really wasn't very good.

Dinner was my weakest meal of the day. D.H. brought me (at my request) a cheeseburger meal from Mcdonalds. Oi, I hate that I crave greasy foods so much. I ate both the burgers that come in the meal and a medium fry. I also drank a med diet Dr. Pepper.

That is about it for the day. With the exception of the yummy strawberries I just finished off. Hopefully I can just go to bed and forget about food for the night. I always seem to crave the junk right about this time at night. Wish me luck!
